What’s on the Table

Start with a Yellowtail Crudo with citrus sesame ponzu, blood orange, and daikon sprouts, alongside Torre Mora's Scalunera Etna Bianco. Organically farmed on the volcanic slopes of Mount Etna, this Carricante white carries the mineral, spicy character of its high-altitude lava soil, with fresh, white fruit and herb aromas, lively acidity, and a clean mineral finish.

100% Carricante | Mount Etna, Sicily

An Nduja Risotto with grilled calamari, matsu rice, tomato on the vine, and crispy capers follows, paired with a Valiano Chianti Classico. The Valiano estate sits 350 metres above sea level with south-west exposure, and takes its name from a Roman general awarded these lands for his merits in the Gallic Wars. The wine opens with violets and dark cherries, ripe tannins buried deep in fruit on the finish.

95% Sangiovese, 5% Merlot | Chianti Classico, Tuscany

A Wagyu Oyster Blade with harissa chimichurri and confit herb garlic mash arrives, alongside a Villa al Cortile Rosso di Montalcino from a 12-hectare estate split between two distinct sites. The cool north-facing slopes of Montesoli lend freshness and acidity, while the sun-warmed Lavacchio vineyards, where coastal winds bring concentration and ripe intensity, give the wine its depth. Full-bodied, with bright cherry and red plum; aromatic with hints of violet and spice.

100% Sangiovese | Montalcino, Tuscany

Close with a Chocolate Mousse with citrus nectar, cacao nib tuile, and candied orange, alongside a Piccini Moscato Dolce Venetian Dress. Sweet and floral, accented with peach, orange blossom, and ripe apricot, it ends the evening exactly as it should

100% Moscato | Veneto
